Some dishes are "Polish" but… not Christmas style at all! Polish people (in Poland, in US it is probably whole different world) traditionally dont eat meat on christmas Eve (next day its OK). So no sausages and no meat in pierogis and golobki. On that day pierogis are usually stuffed either with lentils or mushrooms. and golobki with kasha and mushrooms. And there are usually few fish dishes. Potaoes- yes! But with cold pressed oil and onion. Of course it differs through regions. Traditionally in Eastern Poland they would eat: soda pancakes, golobki with kasha and mushrooms, red borsch with little pierogies stuffed with lentils or mushrooms, pan fried fish with sauce, two or 3 types of pickled fish, potatoes with oil and onion, wheat grains with poppy seeds and honey (kutia), cabbage with peas or cabbage with mushrooms (bigos), drink made of dried apples and pears, bread (no butter on that day. As a vegetarian I had no problem to survive Christmas eve. Next days were worse 😉
