A super simple veggie spring roll recipe!
Veggies of your choice!
Peanut butter (or any nut butter)
Cut up veggies of your choice. I used purple cabbage, carrots, cucumbers, tomatoes, yellow peppers, cilantro. Put to side
Make Sauce. Mix Peanut butter, soy sauce, and a tiny bit of coconut milk until well blended.
Get a large bowl of warm water. Place rice paper wraps in the bowl, but do NOT over wet
Put veggies in wrap, top with peanut butter sauce, and add some sriracha hot sauce.
