  • More vegan Christmas recipes! This cranberry orange French toast bake is the perfect recipe for Christmas morning or a holiday brunch. It’s so oil-free, dairy-free, refined sugar free, and vegan! Hope you enjoy! Full recipe below 🙂

    Cranberry Orange French Toast Bake

    2.5 cups unsweetened soy milk
    1 tsp vanilla extract
    1/2 tsp almond extract
    1 orange, zested and juiced
    1/3 dried cranberries, tart cherries, or vegan dark chocolate chips
    1 loaf of bread
    maple syrup

    In bowl, combine soy milk, vanilla, almond extract, orange zest, and orange juice. Stir to combine.

    Cut or rip bread into 1 inch cubes. You need about 4-5 cups all together. Add to baking dish. I used an 8 x 8 pan.

    Pour batter over bread until fully saturated. Add in cranberries and bake at 375 for 40 minutes or until the center is set and the top is golden brown.

    You want the outside to be crispy and the inside to be soft.

    Warm maple syrup and pour over top.
    Just a tip….a tad of vegan butter on top is pretttttty good too. Just saying.

    Couple of tips:

    1. Use soy milk if possible..it’s super creamy and makes the French toast a nice consistency.

    2. The orange zest may not seem important but it makes a huge difference! Don’t skip it, trust me 🙂

    3. If you don’t like almond extract, just use all vanilla.

    4. If you want the French toast to be sweet on it’s own before adding syrup on top, add 1/4 – 1/3 of a cup of maple syrup to batter before pouring on bread.

    Vegan Sushi Burrito Recipe - Vegan Crab + Veggie Roll - Weeknight Dinners pt 5

    Vegan sushi burrito recipe! Easy vegan crab sushi and vegan veggie sushi burritos that quick, easy, healthy, and perfect for dinner on a busy weeknight! Full recipe and where I buy my ingredients below 🙂

    Vegan Sushi Burrito
    (Makes 2 burritos)

    2 large tortillas
    1 tsp wasabi powder mixed with 1 tsp hot water
    3-4 sheets dried seaweed
    1/4 cup dry white rice
    1/4 cup dry quinoa
    1 cup water

    veggies of your choice. I like:
    - mixed greens
    - cucumbers
    - avocado
    - snap peas
    - shelled edamame

    - 1 tbsp soy sauce
    - 1 tsp rice wine vinegar
    - 1 tsp agave
    - 2 drops sesame oil

    Gardein Crab-less Crab Cakes
    - I used 3 per roll, baked until warmed through and cut in half

    In a sauce pan, add rice, quinoa, and 1 cup of water. Bring to boil then reduce heat to low and cover for 15-20 minutes or until rice is soft and all of the water is absorbed. Then remove from heat and fluff with a fork.

    Meanwhile, make wasabi paste by mixing wasabi powder and water. Set aside. Then chop up veggies of your choice.

    Warm tortilla slightly then spread a thin layer of wasabi paste down the center. Then layer seaweed, rice, veggies, crab cakes if using, and a spoon or two of sauce (reserve the rest for dipping!)

    Tuck in the sides of the tortilla and roll. Cut if desired and serve along side a green salad 🙂

    ******* As I mentioned in the video, the Gardein crab cakes can be found in the freezer section at Target, Whole Foods, and sometimes places like Costco and local health food stores also carry them 🙂

    Wasabi powder can be found in most grocery stores in the International section. Sometimes they even have a remade version.

    Seaweed can also be found in a lot of grocery stores in the International section. I got this roasted kind at Trader Joes 🙂 Whole Foods has seaweed too!***********
