  • Welcome to part to of my vegan christmas recipe series! Today I’m making vegan steak pie with mushrooms and gravy. It might so unusual, but trust me, this is a crowd pleaser and perfect for your Christmas dinners or holiday parties! Hope you enjoy! Full recipe below.

    Vegan Steak Pie with Mushrooms

    Pie Crust

    3.5 cups all purpose flour
    1 tsp baking powder
    1 cup vegan butter
    2 tsp rosemary
    1/2 tsp salt
    1/2 tsp pepper
    1/3 cup water, plus a few extra table spoons if needed

    Combine flour, baking powder, rosemary, salt and pepper in a bowl. Then add cold vegan butter and use a fork or pastry cutter to combine. Mix until totally combined and crumbly.

    Add water and form into a ball. Add one tablespoon of additional water at a time if needed.

    Divide dough in half and the first half in a thin, even layer.

    Transfer to pie dish and poke holes in the bottom with a fork.

    Bake at 375 for 15 minutes.

    Filling

    1 pint mushrooms, sliced
    2 garlic cloves
    2 bags (8 pieces) of Gardein meatless meatloaf

    Sautee mushrooms and garlic with a bit of water or oil until brown. Drain any excess water.

    Cut meatloaf into bite-sized chunks and add to pie crust. Halfway through, layer on mushrooms, and then finish with the remaining meatloaf.

    Vegan Gravy Recipe

    2 tbsp vegan butter
    3 tbsp flour
    1/2 tsp dried mustard
    1/2 tsp garlic powder
    1 tsp onion powder
    2.5 cups low-sodium veggie broth
    2 tbsp low-sodium soy sauce
    sprig of sage, rosemary, and thyme
    black pepper to taste

    Melt butter in sauce pan. Add flour and stir. Gradually add in veggie broth while stirring constantly to avoid any lumps.

    Add in remaining ingredients and let simmer for 20 minutes on low.

    Pour gravy over top.

    Reserve a small ball of dough to add a pretty shape to the top of the pie later on an roll remaining dough into a thin layer. You want it to be a bigger circle than the pie dish so you can create a crust.

    Transfer remaining pie crust onto pie. Gather excess dough around the rim and press gently with a fork to create a pretty design for the crust.

    Then roll remaining ball of dough into a thin layer and use a cookie cutter to cut a pretty shape for the top of the pie.

    Brush with melted vegan butter if desired and bake at 375 for40-45 minutes or until golden brown and flakey.

    Serve warm with vegan scalloped potatoes and green beans!

    VEGAN Christmas Recipes pt 1 - Scalloped Potatoes, Brown Butter Green Beans, and More

    Welcome to my Vegan Christmas recipe series! Today's side dish recipes are vegan scalloped potatoes, brown butter green beans with almonds, and sautéed kale with cranberries. Easy and perfect for the holidays! Hope you enjoy! Full recipes below 🙂 See you tomorrow!!

    Vegan Scalloped Potaotes

    10 medium potatoes, peeled and thinly sliced
    salt + white pepper

    3 cups unsweetened soy milk
    1 container of Treeline Garlic Herb Cheese, or sub vegan cream cheese mixed with garlic powder and Italian seasoning
    2-3 large garlic cloves
    2 tbsp cornstarch
    1/2 tsp nutmeg
    1/8 tsp white pepper
    10-15 grinds salt + more to taste
    Italian seasoning
    vegan parmesan
    rosemary sprig to garnish (optional)

    Slice potatoes and arrange in circle. Season each layer with salt and pepper.

    In a blender, combine soy milk, vegan cheese, garlic, corn starch, nutmeg, salt, and pepper. Blend until smooth, taste to see if you need more salt or pepper, and pour over potatoes.

    Sprinkle with Italian herbs and a generous amount of vegan parmesan. (It's the holidays, go nuts!)

    Cover loosely with foil and bake at 400 for 20 minutes.

    Then uncover and reduce heat to 375. Cook for an additional 40 minutes or until potatoes are fork tender and golden brown on top.

    Brown Butter Green Beans with Almonds

    2 lbs green beans, trimmed
    2 tbsp vegan butter
    salt + pepper
    1/4 - 1/2 sliced almonds

    Steam green beans for 4-5 minutes or until bright green and slightly crisp. Try not to overcook!

    In the meantime, melt vegan butter on stove over medium/medium high heat for a few minutes until brown.

    Drain green beans and pour browned butter on top. Season generously with salt and pepper and top with sliced almonds. Toss to combine and serve warm 🙂

    Sweet + Savory Kale

    1/2 large bunch of kale, de-stemmed and chopped
    2 garlic cloves, chopped
    salt + pepper
    2 handfuls of dried cranberries, tart cherries, or raisins

    Sauté kale and garlic with vegan butter, olive oil, or water for a few minutes until wilted. Season with salt and pepper, then toss in cranberries.

    Serve warm and enjoy!

    This looks very good! I had never considered making a meatless pie, but I am tempted to try this. I haven't been able to find Gardein meatloaf, but I do have access to Gardein beefless bites which may make an interesting substitute.

    Here's a tip that I use for pie crusts. I roll my pie crust out onto parchment paper, and ensure that it isn't too floured, rather just enough not to be sticky. The parchment helps with transporting the soft/brittle dough, and a moist (but not sticky) crust allows for easier shaping as you can add and re-roll sections until you have a large enough circle that will become the top and bottom of the crust!
