  • Welcome to my Vegan Christmas recipe series! Today’s side dish recipes are vegan scalloped potatoes, brown butter green beans with almonds, and sautéed kale with cranberries. Easy and perfect for the holidays! Hope you enjoy! Full recipes below 🙂 See you tomorrow!!

    Vegan Scalloped Potaotes

    10 medium potatoes, peeled and thinly sliced
    salt + white pepper

    3 cups unsweetened soy milk
    1 container of Treeline Garlic Herb Cheese, or sub vegan cream cheese mixed with garlic powder and Italian seasoning
    2-3 large garlic cloves
    2 tbsp cornstarch
    1/2 tsp nutmeg
    1/8 tsp white pepper
    10-15 grinds salt + more to taste
    Italian seasoning
    vegan parmesan
    rosemary sprig to garnish (optional)

    Slice potatoes and arrange in circle. Season each layer with salt and pepper.

    In a blender, combine soy milk, vegan cheese, garlic, corn starch, nutmeg, salt, and pepper. Blend until smooth, taste to see if you need more salt or pepper, and pour over potatoes.

    Sprinkle with Italian herbs and a generous amount of vegan parmesan. (It’s the holidays, go nuts!)

    Cover loosely with foil and bake at 400 for 20 minutes.

    Then uncover and reduce heat to 375. Cook for an additional 40 minutes or until potatoes are fork tender and golden brown on top.

    Brown Butter Green Beans with Almonds

    2 lbs green beans, trimmed
    2 tbsp vegan butter
    salt + pepper
    1/4 – 1/2 sliced almonds

    Steam green beans for 4-5 minutes or until bright green and slightly crisp. Try not to overcook!

    In the meantime, melt vegan butter on stove over medium/medium high heat for a few minutes until brown.

    Drain green beans and pour browned butter on top. Season generously with salt and pepper and top with sliced almonds. Toss to combine and serve warm 🙂

    Sweet + Savory Kale

    1/2 large bunch of kale, de-stemmed and chopped
    2 garlic cloves, chopped
    salt + pepper
    2 handfuls of dried cranberries, tart cherries, or raisins

    Sauté kale and garlic with vegan butter, olive oil, or water for a few minutes until wilted. Season with salt and pepper, then toss in cranberries.

    Serve warm and enjoy!
