    Recipe: Serves 4
    3 Tablespoons of Butter
    1/2 Cup of Onion (Sliced)
    2 Cloves of Garlic (Chopped)
    1 16 oz can of Beans [kidney, cannellini, or black] (Drained and mashed)
    1/2 Cup of Spinach
    1/2 Cup of Mushrooms
    1 1/2 Cups of Cheese (Shredded)
    1 Cup of Frozen Corn
    Salt to Taste
    1/2 Cup of Salsa
    4 Tortilla Shells

    Instructions:
    1. In a large pan, fry onions and garlic with knob of butter on medium high heat. Then proceed to add mushrooms, fry for a minute, and then kidney beans, corn and salsa. Mix and salt to taste. Once hot, remove mixture into separate container.

    2. Clean the pan out with a paper towel and return to heat. Lower to medium. Add a knob of butter to the pan, let it melt, and place the tortilla. Swirl it to spread the butter. Add 1/4 of cheese on top. Then add 1/2 of your Quesadilla mixture, or less if you want to make more Quesadillas. place another 1/4 of the cheese on top and top it off with the Tortilla. Press down lightly so the Quesadilla sticks together. Once the Quesdilla has cooked on one side for 2-3 minutes, flip and cook the other side for 2-3 minutes or till a nice browning is achieved.

    3. Repeat step two for remaining Quesadilla(s). Cut and enjoy delicious Quesadillas with Greek yoghurt, salsa, and/or guacamole.

    Bachelor on a Budget is cooking show to teach people how to make healthy and delicious meals affordably.

    Of the 100+ videos, there are a variety of themes including Vegetarian dishes, Exotic recipes with Everyday Ingredients, Healthy Snack and Breakfast Recipes, infotainment videos such “What the Heck is MSG and Umami?!” and “10 Staple Ingredients to Enhance the Flavour of Your Recipes”

    Egg Muffin Omelette Cups | Breakfast Meal Prep at $1/Serving

    Today we make baked egg muffin omelette cups, for a healthy breakfast meal prep to be eaten throughout the week. Each egg muffin cost's less than $1 per serving, and is a great breakfast to take on the go when you're pressed for time.

    Recipe
    - 2 tbsp of oil (bacon lard, olive oil, butter or coconut oil)
    - 1/2 cup of onion (chopped)
    - 1 cup of bell pepper (chopped)
    - 1 cup of mushrooms (chopped)
    - 2 cups of Kale or Spinach (chopped)
    - 12 Eggs
    - 1 Cup of Cheese (Shredded)
    - 1/2 cup of cooked bacon (chopped)

    Instructions

    1. Preheat your oven to 350 degrees Fahrenheit. Heat a large saute pan on medium high heat and add 1 1/2 tbsp of oil. Then fry your onions for 1-2 minutes, followed by bell peppers, and spices. Mix well with a spatula and then add mushrooms. Fry mushrooms for a minute then add spinach or kale. Mix around, and turn off heat.

    2. Crack your eggs in a large mixing bowl, and whisk for 1 minute. Then grease the inside of your muffin tin with remaining oil, using a brush or paper towel. Evenly distribute the scrambled egg into the muffin tray. Then add your sauteed veggies, bacon, and cheese till muffin tins are full.

    3. Bake in the oven at 350 degrees. Using a spatula, carefully remove the egg muffins, and let cool. When at room temperature, pack away in a tupperware with a paper towel. Replace paper towel, if it gets soggy. Serve with your favourite condiment for eggs.

    You can eat cold, but to reheat, place in microwave for 30 seconds.

    That was an amazing quesadilla recipe! Very tasty. When I went vegetarian the biggest thing I miss is steak so I added a vegetarian steak substitute called choplets into your recipe by cutting one choplet into small thin strips and then dicing into smaller squares and then searing them in a skillet before adding into the quesadilla.     Try substituting the cow cheese for daiya cheese or try the go veggie cheese. The nondairy cheese are much healthier with less fat.
