  • Today we are making this cozy sweet potato and chickpea stew! It is made of simple ingredients that you can find either in your pantry or your local grocery store. Hope you enjoy!     Ingredients:
    2 sweet potatoes, chopped
    1 tbsp oil
    1 tsp smoked paprika
    pinch of salt
    1/2 red onion, chopped
    2 cloves garlic, minced
    1 tbsp oil
    1 – 28 oz can diced tomatoes
    1 – 15 oz can chickpeas, drained and rinsed
    1/2 tsp chili flakes
    pinch of salt, to taste
    pepper, to taste
    2 handfuls fresh spinach (optional)

    Preheat oven for 400 F. Add chopped sweet potatoes, oil, paprika and salt to a baking pan. Bake for 15 minutes. To a pot, add the oil, onion, garlic and cook 4-5 minutes until softened. Add the diced tomatoes, salt, chili flakes and chickpeas and simmer until the sweet potato is done. Remove sweet potato from the oven, stir and cook another 15 minutes. Once cooked, add the sweet potato to the pot with the spinach and cook a few minutes until wilted. Serve.

    Hi fellow vegans! Can someone explain why i'm waking up several times at night just to open my eyes and fall right back to sleep? I started transitioning to veganism about 5 weeks ago, and I just noticed that I have extreme energy and i'm good with 6 hours of sleep and I wake up rested. I used to drink 3 cups of coffee a day and now I only drink one in the morning only because it's part of my morning routine but I don't need it whatsoever. During my first few weeks of transitioning, I had no trouble staying asleep, but this past week I woke up about 3-4 times a night. This is when I noticed that I don't need as much caffeine. Did any of you have this issue? Should I just omit coffee completely and my problems will be solved?

    Before I was vegan and ate beef stew once in a while it would always make me tired when I was full, with these vegan types of stews I don't get tired and still get full I usually put black beans in stews.

    Looks sooo good! I love making warming stews & soups in the winter and freezing 1/2 of what I make; it's so easy & fulfilling to pull out a homemade freezer soup or stew from the freezer on days I just don't have time to cook. Adding this one to my list!

    I think I would rather boil the sweet potatoes in a pot because Dr. Greger's said that is the best method to cook it. I would also add extra chili flakes because I like food extra hot & spicy.
