  • Perfect for cold winter weather when you just want a nice hot dish to warm the bones. This chili takes less than 15 minutes prep, and about 2 hours on the stove top. Here's what I did:

    Soak your kidney beans overnight (or save time by using canned).

    Add to large pot:
    2-3 large cans of crushed tomatoes
    1-2 small cans of seasoned diced/stewed tomatoes
    2 cups frozen corn
    Block of firm/extra firm tofu, crumbled
    2-3 onions, diced
    3 stalks celery, diced/sliced
    As much garlic as you like, diced
    Peppers of any kind, diced

    Seasoning (I like it spicy, so adjust to taste):
    2 tbsp turmeric
    2 tbsp cumin
    1 tbsp black pepper
    2 tbsp chili powder
    1-2 tbsp chili flakes
    1-2 tbsp cayenne pepper
    2 tbsp paprika
    1-2 cups hot sauce
    1 cup nutritional yeast

    Stir well and bring up to temp on a medium heat, continuing to stir frequently. Reduce heat to low (2-3 out of 10) and simmer for 2 hours. Stir occasionally.
