    Vegan Stew Recipe

    6 small – medium sized gold potatoes, chopped
    1/2 large yellow onion, chopped
    4 cloves of garlic, diced
    2 large carrots, chopped
    2-4 stalks celery, chopped
    1 large turnip or rutabaga, chopped
    10 mushrooms, chopped

    2 tsp smoked paprika
    2 tsp dried rosemary
    1 tsp dried thyme
    1/2 tsp cayenne pepper
    black pepper to taste, I did about 10 grinds
    1 carton of store bought veggie broth
    2 tbsp low sodium soy sauce (use tamari if gluten-free)
    1 tbsp tomato paste
    6 cups water

    1 cup lentils
    1 cup green peas

    Optional add ins:
    1 cup diced vegan chorizo
    1 cup kidney beans
    1 cup meatless beef crumbles
    1 cup frozen corn
    kale or spinach

    Optional toppings:
    avocado
    hummus
    hot sauce
    tahini
    vegan parmesan cheese

    Add ingredients, except peas, to a big soup pot. Bring to a boil, then cover and simmer for at least 25 minutes.

    Then add peas and beans if using beans instead of lentils. Cover and simmer for 5-10 mot minutes.

    Taste to see if needs some salt or pepper. If so, add salt and pepper to taste.I find it always needs a little salt.

    Once the veggies are fork tender it’s ready to serve but keeping it at a low simmer for about an hour gives it time to let the flavors develop 🙂 I like to do this when I come home in the evening. By the time I’m ready for dinner, it’s perfect and ready to serve.

    I like to top it with avocado, hummus, hot sauce….all three actually lol Vegan parmesan is great on top too! Get creative and through in whatever you like!

    Fall Inspired Apple Pie Pancakes Recipe | Healthy + VEGAN | Oil-Free

    Fall inspired apple pie pancakes recipe. Healthy, vegan, oil-free, dairy-free, and gluten-free optional pancake recipe. Full recipe below!

    Apple Pie Pancakes

    1 very large, or two medium sized apples
    3/4 cup pure maple syrup
    1 tbsp lemon juice

    2.25 cups flour (I used half gluten free, half whole wheat. Highly recommend this combo but you can certainly use all gluten-free if you prefer)
    2 tbsp ground flax
    2 tbsp water
    1.5 tbsp baking powder
    2 tsp cinnamon
    1/2 tsp ground cloves
    1.5 cups cashew milk or soy milk
    1 tsp vanilla extract

    Chop apple and sauté with 1/4 cup of water for 3-4 minutes or until slightly softened. Add maple syrup and bring to a simmer. Remove from heat, set aside. Best served warm, so I cover this and keep it in the pan until ready to use.

    In a small bowl, add ground flax with 2 tbsp of water. Stir and set aside to thicken.

    In a large bowl add flour, baking powder, cinnamon, and cloves. Whisk to evenly combine.

    Combine cashew milk and vanilla extract and stir into dry ingredients with thickened flax seed paste.

    Whisk to combine and ladle into a non-stick skillet over medium to medium-low heat.

    Wait to flip until small bubbles arise and the base of pancake is set. Gently flip and allow to cook until fluffy and golden brown.

    Serve warm with apple maple syrup. A few added walnuts and pecans really up the "pie" flavor so add them if you like! Hope you enjoy!

    Looks good. I think I would just bake the potatoes in the oven so they’re crispy and I would eat the vegetables uncooked and cold, I love cold vegetables and fruit, cold lettuce, spinach, carrots, strawberries, blueberries, and cucumbers 🤤🤤🤤. I’d probably cook the mushrooms though.

    Can I ask why so many vegans are against oils? is it the excess fat that doesn't do well with the carbs or what? because not all oils are bad for you.

    OMG!! Thank you so much for this recipe. I made this for dinner for my non-vegan family, and they all LOVED it! I cooked it for about 3 hours on high in the crockpot instead and it came out perfect.
