  • What I love about soup is you can add basically anything you would like! This lentil soup was made with carrots, celery, sweet potato with black pepper, turmeric, cumin and salt. Although you could leave it like this or add cayenne / paprika for some spice, I decided to add a little Spanish flavor with onions, tomatoes, and green pepper cooked on the side. So delicious and easy to make!
    Bring water to boil and add in your lentils, 1 big carrot, 3 celery stalks, and 1 big sweet potato (all cut as you wish). Add your spices and let it come to a boil before reducing to medium low heat (4) and cover the pot.
    On the side put your chopped up veggies – half onion, 2 tomatoes, 1 green pepper – with some triguisar ( can be substituted with Goya sazon). Add to lentils for some EXTRAnesss 🙈

    Lentil soup - Vegan Recipe

    What I love about soup is you can add basically anything you would like! This lentil soup was made with carrots, celery, sweet potato with black pepper, turmeric, cumin and salt. Although you could leave it like this or add cayenne / paprika for some spice, I decided to add a little Spanish flavor with onions, tomatoes, and green pepper cooked on the side. So delicious and easy to make!
