  • LAY HO MA everyone! This is a childhood classic for sure! I definitely grew up on this soup of the canned variety. Join me in this episode as I teach you how to make vegan clam / crab chowder! It is absolutely delicious with the jackfruit, potato, and corn omg! Okay, let's begin!

    Ingredients:
    3 1/2 cups water
    1/2 cup jackfruit
    1/2 cup potato (cubed)
    5g kombu
    2 pieces garlic
    1/2 onion
    1 medium potato
    1/4 cup corn
    1/2 cup cashews
    Olive oil
    Salt

    Directions:
    1. Bring 3 cups of water to boil
    2. Squeeze out the excess liquid from the jackfruit
    3. Add the jackfruit and kombu to the water. Add a pinch of salt
    4. When the water comes to a boil, turn the heat down to medium and cook for 5min
    5. Set aside the kombu, jackfruit, and water
    6. Chop your garlic, onion, and potato. Rinse and drain the potato cubes to wash off the excess starch
    7. Place the pan back on the heat and add olive oil
    8. Sauté the garlic, onion, and potato with a pinch of salt for 3-5min
    9. Remove the kombu from the jackfruit, and pour the jackfruit and water into the pan
    10. Let the potatoes cook for 5-10min covered
    11. In a blender, add the cashews, pinch of salt, a drizzle of olive oil, and 1/2 cup of water
    12. Blend on high
    13. Add the corn in to the soup
    14. Add the cashew cream into the soup
    15. Stir gently to combine
    16. Plate, and finish with fresh cracked pepper and a drizzle of olive oil
