    Recipe 1: The Kale Sandwich Show

    Ingredients:
    300gr fried or firm tofu
    1 large tomato
    1/2 bell pepper or roasted poblano pepper
    1 small or 1/2 large onion
    3-4 cloves of garlic
    1-2 chipotle peppers
    1 tbsp tomato paste
    1 tsp paprika
    1/2 tsp ground cumin
    1/2 tsp oregano
    3/4 tsp salt
    1/4 tsp pepper
    1/2 tsp sugar (optional *add if tomatoes are too acidic)
    1/2 cup water
    2 tbsp chopped cilantro

    Recipe 2: The Fitchen

    Ingredients:
    1 yellow onion
    1 roma tomato
    1/2 bunch fresh cilantro
    3 cloves garlic
    1 jalapeño
    2 chipotle peppers (canned, in adobo sauce)
    3 Tablespoons adobo sauce
    1/2 lime, juice of
    1 – 14 oz. package of tofu, extra firm
    olive oil

    1 Poblano Pepper (Roasted)
    1 Pkg Firm Tofu
    2 Tbsps Vegetable or Canola Oil (1/8 cup, 30ml)
    1/2 cups Finely chopped onions 40g
    4 Garlic cloves, minced 1 1/2 tbsps, 12g
    5 Roma Tomatoes, Finely chopped
    2 Chipotle in Adobo 1 tbsp, 17g chopped
    2 1/2 Tbsps Cumin
    2 Tbsps Chili Powder
    1 Tbsp Oregano
    1 1/4 tsp Smoked Paprika
    1/2 tsp Sea Salt
    2 cups Vegetable Broth 450 ml
