    Mashed Potatoes:
    2 lbs Golden potatoes
    Vegan Butter: I used Earth Balance Original
    Unsweetened Original Almond Milk

    Peel and Dice potatoes and place in a pot of boiling water. Boil until potatoes are fork tender. Drain and place in your mixer ( I use my kitchen aid stand mixer) While the potatoes are still hot add your butter (to taste) and slowly add your milk until desired consistency.

    Cornbread (My Nans recipe-veganized):
    2 cups Cornmeal Self Rising
    2 TBSP flour
    1 3/4 cup Unsweetened Almond Milk
    1/4 cup Oil (I used canola)

    Pour oil into cast iron skillet, Set oven to 400 degrees F, While oven preheats place skillet with oil in oven to heat.
    Combine cornmeal, flour, milk in a large bowl.
    Once oven is preheated, remove skillet and pour your batter into the pan. Place back in the oven and cook for 20 minutes.

    Green Beans:
    Destring green beans.
    Place green beans in instant pot and Add water, covering beans. Add 1 TBSP salt. Set Instant Pot to Manual and set 13 minutes. Use quick release pressure release.

    Fried Green Tomatoes:
    Green Tomatoes
    Flour
    Cornmeal
    Unsweetened Original Almond Milk
    2 tsp Apple Cider Vinegar or 1/2 lemon

    Slice green tomatoes and place in a bowl of water, add 1 tbsp salt and let sit about 10 minutes
    Place Almond Milk and apple cider vinegar in a bowl and set aside.
    Combine cornm
